There’s nothing better than a soft sugar cookie. I love the simplicity of this sugar cookie recipe (no rolling or cutting required!), and adding the sprinkles to the batter makes it way more fun!
INGREDIENTS
- 2 3/4 cups all purpose flour (350 grams)
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup unsalted butter
- 1 cup granulated sugar
- 1/4 cup light brown sugar
- 1 large egg
- 1 tablespoon vanilla bean paste or vanilla extract
- 1 1/2 teaspoon salt
- 1/2 cup sprinkles
DIRECTIONS
- Preheat oven to 350°F.
- In a large bowl, combine the 2 3/4 cups flour, 1/2 tsp baking soda, and 1/2 tsp baking powder. Set aside.
- Add 1 cup butter, 1 cup granulated sugar and 1/4 cup light brown sugar to the bowl of a stand mixer and cream together using the paddle attachment. Alternatively, you can add to a mixing bowl and cream using a handheld electric mixer.
- Add 1 large egg, 1 tablespoon vanilla bean paste, and 1 1/2 tsp of salt to the butter and sugar mixture and mix until combined.
- Add the flour mixture to the dough and mix until just combined using the paddle attachment.
- Fold in the 1/2 cup of sprinkles with a spatula.
- Using a medium cookie scoop, scoop dough onto a parchment lined cookie sheet.
- Bake for 10-12 minutes and let cool on the pan. The cookies may look underdone, but they will continue to cook on the cookie sheet while they cool.
- Transfer to a cooling rack.
