SOFT SPRINKLE SUGAR COOKIES

sprinkle sugar cookie recipe

There’s nothing better than a soft sugar cookie. I love the simplicity of this sugar cookie recipe (no rolling or cutting required!), and adding the sprinkles to the batter makes it way more fun!

INGREDIENTS

  • 2 3/4 cups all purpose flour (350 grams)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 large egg
  • 1 tablespoon vanilla bean paste or vanilla extract
  • 1 1/2 teaspoon salt
  • 1/2 cup sprinkles

DIRECTIONS

  1. Preheat oven to 350°F.
  2. In a large bowl, combine the 2 3/4 cups flour, 1/2 tsp baking soda, and 1/2 tsp baking powder. Set aside.
  3. Add 1 cup butter, 1 cup granulated sugar and 1/4 cup light brown sugar to the bowl of a stand mixer and cream together using the paddle attachment. Alternatively, you can add to a mixing bowl and cream using a handheld electric mixer.
  4. Add 1 large egg, 1 tablespoon vanilla bean paste, and 1 1/2 tsp of salt to the butter and sugar mixture and mix until combined.
  5. Add the flour mixture to the dough and mix until just combined using the paddle attachment.
  6. Fold in the 1/2 cup of sprinkles with a spatula.
  7. Using a medium cookie scoop, scoop dough onto a parchment lined cookie sheet.
  8. Bake for 10-12 minutes and let cool on the pan. The cookies may look underdone, but they will continue to cook on the cookie sheet while they cool.
  9. Transfer to a cooling rack.
  10. Enjoy!
