Easy Pumpkin Crumble Muffins

Are you team pumpkin? I absolutely love pumpkin flavored treats, and I've helped my kids learn to love it too! They were so excited I made pumpkin oatmeal the other day, which made me so happy! I decided to surprise them the other morning with pumpkin muffins because they LOVE muffins for breakfast. I think they would eat them every single day if they had the choice. 

Fall is finally here, making it the perfect time to embrace all things pumpkin! Celebrate the arrival of the season with these delicious pumpkin muffins. These pumpkin muffins are easy and quick to make, and your kids will absolutely love them! This easy pumpkin muffin recipe is sure to become a fall favorite for the entire family!

Easy Pumpkin Muffin Recipe

Ingredients:

Muffin ingredients

  • 1/2 cup butter melted
  • 1/3 cup brown sugar
  • 1/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 3/4 cup all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg

Crumble topping ingredients 

  • 4 tbsp butter, room temperature
  • 1/2 cup all purpose flour
  • 1/3 cup brown sugar

Directions:

  1. Preheat oven to 350 degrees.
  2. Make the crumble topping by combining 4 tbsp butter, 1/2 cup all purpose flour and 1/3 cup brown sugar in a bowl. Mix together with a fork until it becomes a crumble texture, do not overmix. Set aside.
  3. In a medium bowl, combine 1 3/4 cup all purpose flour, 1 tsp baking soda, 1/2 tsp salt, 1 tsp cinnamon, and 1/2 tsp nutmeg.
  4. Combine 1/2 cup melted butter, 1/3 cup brown sugar, and 1/4 cup sugar in a large bowl or stand mixer and mix together for 1-2 minutes.
  5. Add 2 large eggs and 1 tsp vanilla extract to the bowl and combine.
  6. Add 1 cup pumpkin puree to the bowl and combine.
  7. Add flour, baking soda and salt mixture to the wet ingredients and stir to combine. Do not overmix.
  8. Scoop batter into a 12 cup muffin pan.
  9. Add the crumble mixture to the top of each muffin.
  10. Bake at 350 degrees for 15-18 minutes, or until a toothpick inserted comes out almost clean.
  11. Let cool and enjoy!
