Easy Spring Cookie Recipe

Every year by the beginning of January, I’m ready for winter to be over and Spring to arrive. There’s something about the longer days, sunshine, and bursts of color everywhere that make my heart so happy. Winter is not my jam, and after Christmas is over, I count down the days until Spring arrives.

Right after Valentine’s Day, I start making plans for Easter brunch, which is one of my favorite holidays to celebrate. Last year, I made these super fun sugar cookies shaped like Easter eggs, and they were a hit! This year, we’re going to be hosting a few more people, so I wanted to have a few different Spring dessert options to spice things up a bit. Now that I’ve become obsessed with cooking and baking, I knew I had to create a new Spring cookie recipe for my family.

Easy Spring Dessert Recipe

To keep things festive, I grabbed a bag of the Easter colored M&M’s and started thinking about what kind of fun Spring cookie recipe I could make. I absolutely LOVE Oreo cookies, but I felt like the original chocolate version wouldn’t work for Spring, so instead, I grabbed some Golden Oreos – because I love those too. Once I got home, I got to work! I am so happy with how these Spring cookies turned out that I’ve already made (and eaten) two batches (with the help of family and friends of course).

Easy and Delicious Spring Cookie Recipe

Ingredients

  • 1 cup (2 sticks) unsalted butter (room temperature)
  • 1 cup brown sugar
  • ½ cup sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 tsp salt
  • 2 ¼ cups all purpose flour
  • ½ tsp baking soda
  • 1 cup semi sweet chocolate chips
  • 1 ½ cups Spring colored M&M’s
  • 10 Golden Oreos (cut into quarters)

Directions

  1. Preheat oven to 350 degrees and line a cookie sheet with parchment paper
  2. Add 2 sticks of unsalted butter, 1 cup of brown sugar and ½ cup of white sugar to your stand mixer bowl (If you don’t have a stand mixer, you can use a large mixing bowl)
  3. Cream the butter and sugar together for 3 minutes using the paddle attachment on your stand mixer (You can use a hand mixer as well)
  4. Add in 2 eggs, 1 tsp salt, and 2 tsp vanilla extract and mix until just combined and scrape down the sides with a spatula
  5. Add 2 ¼ cups all purpose flour and ½ tsp baking soda and mix until just combined
  6. Add 1 cup chocolate chips and the Golden Oreo pieces and mix until just combined
  7. Remove the bowl from the stand mixer and fold in 1 1/2 cups M&M’s
  8. Using an ice cream scoop, place dough on prepared cookie sheet
  9. Bake for 8 – 12 minutes until golden brown on the edges (Adjust time according to preference and size of cookie – shorter for smaller cookies, longer for larger cookies)
  10. Remove from oven and let cool for 2 minutes on the pan
  11. Place on a cooling rack until cool, store in an airtight container for up to 3 days
