Easy Veggie Flatbread Recipe

Are you looking for a healthier flatbread recipe? This veggie flatbread recipe features fresh spring veggies and would be a great easy spring or summer dinner idea! Recently, I've been loving the combination of cucumber, Roma tomatoes and feta cheese, so bringing all of that together on delicious flatbread sounded like a great combo!

To be honest, I had high hopes of growing all of these veggies in my backyard garden, but so far, it hasn't worked out. A wild animal made it's way into my raised beds and left a surprise for me where the tomatoes and cucumbers were growing. Now, we have to build a larger fenced off garden to keep the animals out, which might take a bit of time to do. Even though I didn't get to use fresh veggies from the garden, this still turned out so good and was super easy to make. I hope you love the recipe, please let me know if you try it!

Ingredients

  • Flatbread or pizza crust (I like to make my own using King Arthur's Neapolitan pizza flour, but you can use frozen or store bought to make it easier!)
  • 3 Roma tomatoes
  • 3 cucumbers (I like to use Persian cucumbers)
  • 1/2 of a red onion
  • 1 cup Feta cheese crumbles
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper

Directions

  1. Bake the flatbread according to the package or recipe directions and let cool for 5 minutes.
  2. Chop the Roma tomatoes and cucumbers into small cubes.
  3. Slide the red onion into extra thin slices.
  4. Combine tomatoes, cucumbers, and red onion in a bowl and season with a pinch of salt and pepper.
  5. Add the vegetables to the top of the flatbread and spread out evenly.
  6. Sprinkle on the Feta cheese crumbles.
  7. Drizzle olive oil and balsamic vinegar on top.
  8. Add another pinch of salt and pepper to taste.
  9. Cut and enjoy!
