Mini Chocolate Chip Pancake Recipe

Over the past few months, I've been very interested in cooking my own food from scratch. I have always loved to bake and cook, but I never really had an interest in making things from scratch. Now, I'm hooked.

I started off slow by attempting to make my own homemade artisan bread and finally perfected my method after a few tries and even came up with my own recipe! Next, I was determined make mini pancakes for my kids because they love having these for breakfast. We usually buy the mini pancakes at the grocery store, but one day I thought to myself, how hard could it really be to make my own? It sounded simple enough, so I got to work.

Mini Chocolate Chip Pancake Recipe

First, I had to figure out how I was going to cook these things. You see, the mini pancakes my children like come in a sphere shape. I started thinking there has to be some sort of device I can purchase to make these. I did some research and landed on cake pop makers. I found a really inexpensive one on Amazon called the Babycakes Mini Maker, and decided it would be a good place to start.

Once my cake pop maker arrived, I was so excited to give these a try. My boys really love chocolate chip pancakes, so I whipped up my favorite pancake recipe, added chocolate chips and preheated the cake pop maker. All I had to do was scoop in a little bit of batter, cook for about 3 minutes and they were ready!

My recipe ended up making around 96 mini pancake bites, which is more than double than the store bought version for a fraction of the price. Since the recipe makes so many, I freeze the leftovers for later! I'm happy to report that I haven't purchased pre-packaged mini pancakes since!

RECIPE

Ingredients

  • 1 1/2 cups all purpose flour
  • 3 1/2 tsp baking powder
  • 1 tsp granulated sugar
  • 1/2 tsp salt
  • 1 1/2 cups milk
  • 1 large egg
  • 3 tbsp melted butter (plus more for greasing)
  • 1 cup mini semi-sweet chocolate chips

Directions

  1. Melt 3 tbsp butter and let cool.
  2. While the butter is cooling, combine 1 1/2 cups all-purpose flour, 3 1/2 tsp baking powder, 1 tsp sugar and 1 tsp salt in a large bowl.
  3. In a small bowl, combine the 1 1/2 cups milk and 1 large egg.
  4. Add the melted butter to the flour mixture.
  5. Then, add the milk and egg mixture.
  6. Stir to combine with a whisk until the batter comes together.
  7. Add the mini chocolate chips and gently stir.
  8. Pre-heat the mini cake pop maker and grease with butter, ghee, or coconut oil.
  9. Once the cake pop maker is ready, spoon batter into the cake pop reservoir about 3/4 of the way up.
  10. Close the lid and let cook for about 3 minutes.
  11. Once done, open the lid, and use a spoon or spatula to remove from cake pop maker.
  12. Add to a plate, let cool for a few minutes, add your favorite pancake toppings and enjoy!

Freezing directions

If you have a bunch of mini pancake bites left over, don't worry, you can freeze them! I use my vacuum sealer, but you can simply freeze them in a Tupperware or bag. If you are using a vacuum sealer, make sure you freeze them before vacuum sealing so you don't squish them.


Storing Mini Chocolate Chip Pancakes in the Freezer

Reheating directions

To reheat frozen mini pancake bites, preheat oven to 375 degrees and bake for about 8 minutes, and voila!
